These Toffee Bars are the bomb and will be a bit hit with your family and friends at Christmas or any time of the year. Also, they freeze well, so make them ahead of time, cut them into squares, and freeze. Defrost whenever you want to have a sweet treat.
These Toffee Bars are just one of the many desserts my mother-in-love, Baba Jean (Barbara) is known for. The toffee bars are one of our favorites, and never last long at our house.
I attempted to make them a couple of months ago, but they turned out a little greasy. Since Carey's parents were in town, I asked Baba Jean to pass down her famous toffee bar recipe.
My youngest son, William, "agreed" to help her bake since she had recently broken her wrist.
He has always been my child who was most interested in cooking.
When he was in elementary school, he said he wanted to be a chef. See pic below!! Now he wants to be an aeronautical engineer, go figure!
My daughter, Victoria, agreed to film the "episode" since she is a Freshman film student.
We are naming this episode, Baking With Baba Jean.
This is our first attempt to dabble in filming anything, so let's just say we are learning as we go! The toffee bars turned out perfect! If William can make them, so can you!
We are sharing Baba Jean's secrets for the yummiest toffee bars that Santa will be requesting this year with his glass of milk!

Baking With Baba Jean to see exactly how the toffee bars are made!
Ingredients:
1 1/2 sticks of butter
2 1/4 cups of brown sugar
2 eggs
2 teaspoons of real vanilla
2 cups of all-purpose four, sifted.
2 teaspoons baking powder
a pinch of salt
1 cup of chopped pecans
1 cup of toffee pieces
3 tablespoons of English Toffee flavoring or another similar flavoring. In this episode, we used what we had on hand, a Praline Flavoring.
Nuts, pomegranate seeds, caramel sauce, etc. for garnish
Directions:
Preheat the oven to 300 degrees. Line a 9 x 13-inch baking pan with parchment paper, and then spray with cooking spray. Baba Jean says that a dark metal pan works best.
In a large saucepan, melt the butter on medium heat and add the brown sugar. Stir until the sugar has dissolved, and then let it cool.
3. Mix the eggs, vanilla, and flavoring in a small bowl. Next, mix the sifted flour, salt, and baking powder in another bowl. Slowly mix the egg mixture and flour mixture into the cooled sugar mixture. Use a spatula or wooded spoon to blend. Stir in the toffee pieces and the chopped pecans.
4. Pour the mixture into the parchment-lined baking pan. Bake at 300 degrees for 45 minutes or until a toothpick comes out clean.
5. Let it cool in the pan. Carefully pull the toffee bars out of the pan using the sides of the parchment paper, and cut into squares or triangles. Garnish with nuts, Carmel sauce, cranberries, pomegranate seeds, etc.
We had so much fun baking with Baba Jean!
