Easy Eggs in Spicy Tomato Sauce With Bacon and Capers! The Best Family Brunch or Romantic Breakfast!

This dish is similar to my Easy and Elegant Poached Eggs With Bacon and Herbs since all the eggs are cooked at once which makes it easy and convenient. This is a wonderful savory and spicy breakfast, brunch, or even dinner for that matter! Also, it may be the perfect romantic breakfast for your spouse and sweetheart.❤️


I added Calabrian Chiles which makes this dish wonderfully spicy. You could also use jalapeño or Serano peppers to substitute. Of course, if you don't like spicy food, leave the chiles and peppers out. 😁 Adding the Capers balances the flavors with a natural salty, briny flavor, and gives this dish a little something-something. I hope you like it!


First Gather Your Ingredients....



I use what I have. Be creative and feel free to substitute ingredients. Start with small amounts and just be sure to taste your food to make sure the flavors blend. You can always add more of an ingredient, but you can't take it away!













Ingredients:

  • 1 Tablespoon of EVOO (Extra Virgin Olive Oil), or spay the pan with cooking spray

  • 2-3 pieces of thick-cut bacon cut up into small cubes

  • 2 Shallots or one small onion diced

  • 3 garlic cloves minced or grated

  • 1/4 cup of dry white wine or chicken broth

  • One 26-28 ounce can of crushed or chopped tomatoes

  • 2-3 finely chopped Calabrian peppers (packed in oil). Remove the seeds if you want to decrease the heat.

  • One tablespoon of sun-dried tomato paste (optional)

  • 2-3 tablespoons of capers, drained

  • 1/4 cup of fresh parsley chopped

  • Salt and pepper to taste

  • 2 teaspoons of smoked paprika

  • 1 teaspoon of Townsend Jalapeño Greek seasoning (optional)

  • 4-6 large eggs, cracked into small individual bowls

  • 1/4 cup of grated Parmesan or Pecorino-Romano for garnish (optional)

  • More capers and parsley for garnish


Directions:

  1. Preheat the oven to 300 degrees.

  2. In a large skillet, heat EVOO over medium heat, or spray the pan with cooking spray. Add the cut-up bacon, and cook until fat is rendered, 1-2 minutes. Add shallots, and garlic, and cook for 1-2 more minutes until shallots are softened. Be careful not to burn the garlic.
















3. Add the wine or broth to deglaze the pan, let cook for one minute.















4. Add tomatoes and tomato paste.




















5. Add parsley, capers, and spices. Allow to simmer and reduce, about 5-10 minutes.















6. Make a well in the mixture, then carefully place an egg in the well. Repeat with the other eggs. Sprinkle the eggs with more salt and pepper.















7. Put the pan in the oven, and bake the eggs for 8 to 12 minutes, depending on how you prefer your eggs.











8. Garnish with chopped parsley, cheese, and capers. Serve with fruit, croissants, and a good cup of coffee or cappuccino.
