How To Make a Tasty Thanksgiving Sheet Pan Dinner. All of the Flavor, and None of the Fuss! 🍂

Updated: Dec 1, 2020

I used boneless, skinless chicken thighs in this picture, and garnished the dish with fried sage.

Sheet Pan Dinners are so easy to make and easy to clean up! And this Thanksgiving many of us are having much smaller celebrations. This is a good alternative if you don't want to cook a giant turkey with all the fixings.

But even if you do have a big Thanksgiving or Christmas dinner, this is a great dinner for any night of the week.

This dinner includes chicken (instead of turkey), carrots, onions, celery, cornbread and ciabatta bread cubes which together with the spices taste like dressing!

This is a Pioneer Woman recipe, and I have made this recipe several times. Ree, The Pioneer Woman, includes a recipe to make homemade cornbread, which is great if you have the time. I usually buy store bought cornbread for the sake of time.

Once you have all the ingredients on the sheet pan, you put the pan in the oven for 15 minutes, then 30 to 35 minutes; so much faster than cooking that Thanksgiving dinner!

It really is an easy recipe to make, and my family loves it! I would not change anything about the recipe, except perhaps making my own cornbread from scratch! But the cornbread is fabulous by the way!

To make the dish a bit healthier, I have used skinless chicken thighs.

If you use chicken thighs without the bone, reduce the cooking time slightly. The chicken thighs should have an internal temperature of 165 degrees.

If you do want to add a fancy garnish, try adding Fried Sage Leaves.

I grow herbs in pots on my deck, and this time of year I still have sage.

Fry a bunch of washed and dried sage leaves in 1/2 cups of olive oil on medium-high heat.

The depth of the oil should be about 1/2 inches.

Fry the leaves for about 15 seconds, turning occasionally with tongs or a spoon. Don't let the leaves become too brown or they will become bitter. Sprinkle the fried sage leaves over the sheet pan dinner. 😁

Happy Thanksgiving! Or happy Tuesday, Wednesday, or Whatever!
