It's Pumpkin Soup Time! How To Make My Favorite Fast And Healthy Pumpkin Soup!

I love Pumpkin Soup! I love pumpkin everything! And pumpkin soup is even more special when it is good for you!


I do have a more decadent version of pumpkin soup in this section, and I also provide a link at the bottom of the page. I usually serve that version at Thanksgiving dinner.


However, this version of pumpkin soup is fast and healthy. My family loves to eat it this time of year. 🍁



First, gather your ingredients:

The ingredients. Check the recipe, since some ingredients may be left out.


















The Ingredients:

- 1 large onion chopped

- 1 medium sweet red or green pepper, chopped

Note: Use both green and red pepper if you like lots of vegetables...I do!

- 2 tablespoons of butter or olive oil

- 2 cups of fresh or frozen corn, thawed

- 1-2 small jalapeño pepper/s, seeded and chopped

- 2-3 large garlic cloves, grated

- 2 teaspoons of chili powder

- one carton (32 ounces) of chicken stock or vegetable stock

- 2 teaspoons of smoked paprika (optional)

- 2 teaspoons of cumin (optional)

- 1 teaspoon of coriander (optional)

- 1 can (15 ounces) solid-pack pumpkin

- 1 shredded or chopped rotisserie chicken, fully cooked (optional)

- 1/2 to 1 teaspoon of salt

- 1/2 teaspoon of black pepper

- 1/4 teaspoon of cayenne pepper

- 2 tablespoons of fresh lime or lemon juice

- cilantro, sour cream, and pumpkin seeds for garnish


The Recipe:

1. Chop onion, red or green pepper, and jalapeño.

2. In a large saucepan, saute onion, red or green pepper, and jalapeño pepper in olive oil or butter until almost tender, a couple of minutes.

3. Add the corn, garlic cloves, and chili powder; saute for 2 minutes longer.

4. Stir in the chicken stock, pumpkin, chicken, salt, black pepper, cayenne pepper, smoked paprika, and other spices until blended.

5. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Taste and add more spices if needed. Stir in lime or lemon juice.


6. Add cilantro, sour cream, pumpkin seeds, etc for garnish.



Makes approximately 6, one- cup servings.

This is a recent picture of the soup with rotisserie chicken added.


I added two small rotisserie chickens and added 1 cup more of the chicken stock to make more servings.

You could also double the recipe.
