The Best Homemade Green Goddess Dressing for Salads, Pastas, and Much More!

Green Goddess Dressing is so yummy and nutritious and a great way to use all your herbs in your herb garden.


Not only is Green Goddess Salad dressing a great way to top your favorite salad,

you can also...

  • Use it as a dip for your crudités

  • Drizzle it on a Caprese Salad instead of a Balsamic vinaigrette

  • Pour it over pasta

  • Use it for a topping/sauce for steak, lamb, pork, chicken, fish, or even roasted vegetables.

  • Spread it on sandwiches

  • Topping for eggs, especially deviled eggs

Green Goddess salad dressing is an oldie, but goodie and has been around since the 1920s. The traditional version included only two herbs, chives, and parsley as well as white wine vinegar, anchovy fillets, sour cream, and mayo.


There are many variations of this salad dressing. Some versions include egg yolks, olive oil instead of mayo, etc. I wanted to amp up the herbaceousness of the dressing and use up as many of my herbs as possible. So I used six or seven herbs/greens.


Feel free to leave out the herbs you don't like and/or do not have on hand. Also, add herbs you like. I added a few other soft herbs that are not traditionally in the dressing because I had an abundance of them on hand. Experiment! It's fun! It's only food, if you mess up, try again!


So why make your own dressing when you can buy it in the store?

  • It's preservative-free

  • It's pesticide-free

  • You control the salt, fat, and actually all the ingredients in the recipe!!

  • You can finally use all those herbs you have been growing! Not growing herbs? Click on the link above.

  • You can exclude ingredients if allergic or sensitive

  • You can add ingredients and be creative

  • Store-bought dressing is never as good as homemade. Homemade dressing tastes better and usually has fewer calories than store-bought dressing with more nutritional value.


Things you will need:

A food processor is very important!!


Suggested Ingredients (about 1 1/2 cups) I usually double it!

  1. 1 1/2 cups of packed baby spinach or watercress

  2. 1 cup of fresh parsley

  3. 5 tablespoons of fresh chives

  4. 1/4 cup of fresh tarragon

  5. 1/2 cup of fresh mint- not traditional

  6. 1/4 cup of fresh dill, thyme, etc.- not traditional

  7. 2 teaspoons of capers

  8. 1 teaspoon of anchovy paste, or 1 teaspoon of salt. Add more if you like things salty!

  9. 2 cloves of garlic, peeled and smashed

  10. 1/2 of a shallot or a couple of green onions chopped, or 1/4 of a small onion

  11. Optional: Add 1/2 to 1 whole avocado. This would be delicious! I did not try this since Carey is allergic to avocados. 😒

  1. 1/2 to 1 teaspoon of sugar

  2. 2 tablespoons of fresh lemon juice

  3. 1 tablespoon of white wine vinegar

  4. 2 teaspoons of Dijon mustard

  5. 1-2 teaspoons of Worcestershire Sauce

  6. 1 cup of mayo or greek yogurt or a combination of both

  7. Pepper, and more salt to taste

Directions:


1. Combine the first ten ingredients in the food processor until well blended.

2. Add the next six ingredients and blend until pale green and very smooth. Taste and adjust spices and/or add more yogurt/ mayo if more creaminess is desired.

3. Serve over a wedge salad or use any of the ideas above. Store in the refrigerator for up to a week.

A beautiful addition to any table.

Arrange greens/lettuce on a platter. I used slices of Romaine lettuce. Add other veggies such as green onions, sliced cherry tomatoes etc.

I also added jarred corn relish- it looks so pretty on the greens.

Pour some of the dressing over the salad. Reserve some extra dressing in a gravy bowl for guests who want extra dressing.

A Caprese salad with Green Goddess dressing

Updated Caprese Salad


Pour the dressing over arranged sliced Heirloom tomatoes (or regular red tomatoes), and sliced mozzarella cheese with fresh basil for an updated Caprese Salad! I also added chopped green onions.


It's so simple and pretty and really yummy.


The Green Goddess Salad Dressing does not get runny like balsamic vinegar, so you can arrange the tomatoes, cheese, and dressing ahead of time, and store in the refrigerator until ready.


Add the basil leaves when ready to serve.
