What's For Dinner Tonight? A Fall Chicken Skillet Roll-Over Meal!🍁

We just got back from Silver Dollar City's Harvest Festival in Branson, MO. We usually go one or two times a year. One of my favorite things to eat when we are there is the skillet meals; so of course I had two! I realized they are pretty easy to make, so I made one last night!

I had been really busy this week, so I picked up one of those pre-made meals at a grocery store. It was't bad, but it looked better than it tasted. I decided to give it a new life the next day- and make a roll-over meal. A roll-over meal is when you use a previous meal and make something new. The roll-over skillet meal tasted great; so I wanted to share the recipe!


I used what I already had in my freezer and refrigerator. I encourage everyone to do the same. This is a base recipe and technique. If you don't like an ingredient, or spice, leave it out or exchange it with something you like!


The key to this meal is cooking the meal in a cast iron skillet. If you don't have one, they are cheap and easy to find. But you can use any skillet. You may not get the same caramelization of the sugars in the food- resulting in browning and that yummy "nutty" flavor.


In addition, potatoes or sweet potatoes would have tasted great in this meal. I would have diced them and cooked them in boiling water for a few minutes until slightly tender before adding them to the skillet.

I did not have any potatoes, so this was a yummy carb free meal. I used carrots, frozen mixed vegetables, and riced cauliflower.


The Basic recipe and technique:

1. I used the meal to the right from the grocery store.

I did not use the mashed potatoes. I could have also

made a yummy Shepard's pie with this meal.

*Note: Just use leftover cooked chicken breasts and carrots for this meal.😁


2. Cut up the veggies- carrots.
















3. Put the carrots in a cast iron skillet with olive oil. The skillet should be pre-heated to a

medium high heat.

4. Let the carrots begin to get soft and brown, do not over stir.

5. Add the other veggies. I added the frozen vegetables that I defrosted and drained.



6. Mix to combine and cook for several minutes. Do not over stir. Allow veggies to caramelize.

















7. Cut up the cooked chicken.

















8. Add the chicken, and cook until warmed through.
















9. Add any additional spices. I added smoked paprika and more salt, pepper, and garlic. In addition, I added soy sauce and Worcestershire sauce. The soy sauce gave the meal a flavor similar to lettuce wraps. Leave it out if you don't want that flavor.















10. Stir to combine, and cook for several more minutes.
